Cheesecake Recipe You Can Make at Home Easily and Quickly

The cake made from ordinary cottage cheese is known as cheesecake. You can easily make a cheesecake recipe for your meal if you know the full process. When cottage cheese is mashed or blended, it turns into cream cheese.

Today, we will learn a cheesecake recipe that you can make at home with a perfect creamy and soft texture, just like a 100% store-bought cheesecake. So, let’s not delay and move on to the recipe.

Ingredients:

  • Raw Milk – 1 liter
  • Sour Yogurt – 1/2 cup
  • Cottage Cheese – 1/2 cup
  • Butter – 2 tablespoons
  • Skimmed Milk – 1/3 cup
  • Flour – 1/4 cup
  • Corn Flour – 1 tablespoon
  • Salt – A pinch
  • Eggs – 4
  • Sugar – 1/2 cup
  • Vanilla Essence
  • Lemon Juice – 1 teaspoon

Cheesecake Recipe Making Procedure:

Step 1:

First, prepare the cottage cheese. Take 1 litre of milk in a pot. Heat it until it starts to boil. Once it boils, add 1/2 cup of sour yogurt mixed with water. Instead of sour yogurt, white vinegar or lemon juice can be used. Keep the heat on medium-low and stir gently. Once the cottage cheese forms, remove it from the heat. Place a thin cotton cloth over another pot and pour the cottage cheese with its water into it. After straining, discard the water and leave the cheese in the cloth for 20 minutes to remove excess water and cool down. After 20 minutes, spread the cottage cheese on a plate and mash it with your hands for 10 minutes, ensuring no lumps remain.

Step 2:

On the other hand, put hot water in a pan. Now, place a heatproof bowl over this pan. Put the mashed cottage cheese in the bowl and add 2 tablespoons of butter or soybean oil. Then add 1/3 cup of liquid milk. Mix well so that the cottage cheese and butter melt properly. Mix like this for 5 minutes. Then, remove the heatproof bowl from the hot water and let it cool to room temperature. Now, add the yolks of 4 eggs. Beat well to mix with the cottage cheese.

Step 3:

Now, sift the dry ingredients into the same bowl. Sift in 1/4 cup of flour, 1 tablespoon of cornflour, and a pinch of salt. Add about 1 teaspoon of vanilla essence. Mix well, and set aside. In a dry mixing bowl, take the whites of 4 eggs. Add 1/2 tablespoon of lemon juice. Beat with an electric beater for 2 minutes. If the eggs are from the fridge, take them out 1 hour before baking. Then add 1/2 cup of sugar, but in two parts. Beat at medium speed for 3 minutes after the first addition of sugar, then add the remaining sugar and beat again for 3-4 minutes until it forms a foam-like texture. Now, gently mix some of the beaten egg whites into the flour mixture. Add more of the egg whites gradually, mixing gently.

Step 4:

Now, pour the flour mixture into the remaining beaten egg white foam and gently fold it in. Take a 4-inch cake pan and line the bottom and sides with baking paper. Pour the cake batter into the pan and even it out. Place the cake pan on a stand inside a larger cake mould and add some hot water to the mould. Bake in an oven preheated to 150°C for 1 hour.
